Cooking Instructions
Instructions for 2 people (double for 4)
1 Roasted Cauliflower Korma & Fragrant Rice

Preheat the oven to 200°C/ 180°C (fan)/ 395°F/ Gas 6 and boil a kettle

Cut the cauliflower into small florets (discard the stem and leaves) then add the florets to a baking tray with the ground cumin, a pinch of salt and a drizzle of vegetable oil and give everything a good mix up

Put the tray in the oven for 20-25 min or until the cauliflower has softened

2 Roasted Cauliflower Korma & Fragrant Rice

Meanwhile, peel and finely slice the brown onion[s]

Peel and finely chop (or grate) the garlic

Peel (scrape the skin off with a teaspoon) and finely chop (or grate) the ginger

3 Roasted Cauliflower Korma & Fragrant Rice

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium heat

Once hot, add the sliced onion with a pinch of salt and cook for 6-7 min or until starting to soften

Remove the coconut cream from the sachet[s] and chop it roughly

Dissolve the chopped coconut cream and Knorr vegetable stock cube[s] in 250ml [450ml] boiled water – this is your coconut stock

4 Roasted Cauliflower Korma & Fragrant Rice

Add the basmati rice and 300ml [600ml] cold water to a pot with a lid and bring to the boil over a high heat

Once boiling, add the cloves and a pinch of salt, reduce the heat to very low and cook, covered, for 10-12 min or until all the water has absorbed and the rice is cooked

Once cooked, remove from the heat and keep covered until serving - this is your fragrant rice

5 Roasted Cauliflower Korma & Fragrant Rice

Once the onion has softened, add the chopped garlic and ginger and cook for 1 min further

Add the ground turmeric and korma curry powder to the pan and cook for 1 min or until fragrant

Once fragrant, add the coconut stock and agave nectar and cook for 5-6 min further or until thickened in consistency – this is your korma sauce

6 Roasted Cauliflower Korma & Fragrant Rice

Whilst the sauce is cooking, add the flaked almonds to a baking tray and put the tray in the oven for 2-3 min or until lightly toasted

Tip: Watch these like a hawk to make sure they don't burn!

Chop the coriander leaves finely, discarding the stalks

7 Roasted Cauliflower Korma & Fragrant Rice

Once the sauce has thickened, stir the roasted cauliflower through the korma sauce – this is your roasted cauliflower korma
