Before you begin...

Get all your ingredients and equipment ready

Skim through these steps, then wash your fruit and veg

Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 mins)


Now, let's get started!

Boil a full kettle

Add the rice noodles to a pot and cover with boiled water

Boil over a high heat for 5-6 min or until tender

Once softened, drain the noodles and run them under cold running water and set aside for later


Heat a large, wide-based pan (preferably non-stick with a matching lid), with 1 tbsp [2 tbsp] vegetable oil over a high heat

Once hot, add the meat-free mince and Tenderstem broccoli and cook for 5-6 min or until browned, stirring occasionally


Meanwhile, top, tail and grate the carrot[s] (no need to peel!)


Combine the chilli jam, rice vinegar and soy sauce with 1 tbsp [2 tbsp] vegetable oil and 50ml [75ml] water in a small bowl – this is your stir fry sauce


Once the mince has browned, add the grated carrotgarlic & ginger paste and a pinch of salt and cook for 1-2 min


Add the drained noodles and stir fry sauce to the pan and give everything a good mix up – this is your meat-free stir fry
