Cooking Instructions
Instructions for 2 people (double for 4)
1 2435 - Steak, Creamy Mushroom Sauce & Parsnip Chips

Preheat the oven to 200°C/ 180°C (fan)/ 395°F/ Gas 6, boil a full kettle

Top, tail, peel and chop the parsnips into chips 

Add the parsnip chips to a tray with 1 tbsp [2 tbsp] vegetable oil and a pinch of salt then put the tray in the oven for 20-25 min or until cooked through and golden 

Heat a large, wide-based pan (preferably non-stick) over a high heat

Pat the rump steaks dry with kitchen paper, drizzle them with vegetable oil and season with a pinch of salt on both sides

Once the pan is very hot, add the steaks

For rare, cook for 2 min max on each side

For medium-rare, cook for 2-3 min on each side

For medium, cook for 3-4 min on each side

Whilst the steaks are cooking, slice the chestnut mushrooms

Once the steaks are cooked, transfer them to a plate to rest and reserve the pan 

Carefully wipe out the pan with kitchen papeto remove any excess fat

Whilst the steaks are resting, return the reserved pan to a medium heat with a drizzle of vegetable oil 

Once hot, add the sliced mushrooms and cook for 5-6 min or until softened and browned 

Dissolve 1/2 [1] Knorr chicken stock cube in 100ml [180ml] boiled water

Once the mushrooms have browned, add the Chinese rice wine and cook for 1 min 

Add the chicken stock and soft cheese and cook for 3-4 min further or until thickened – this is your mushroom sauce

Meanwhile, wash the spinach, then add it to a colander and pour boiled water all over it so that it starts to wilt

Rinse the wilted spinach under the cold tap until it's cool

Once cool, squeeze the water out of the spinach 

Add the wilted spinach and a generous grind of black pepper to the mushroom sauce and stir it all together
