Cooking Instructions

Add the basmati rice and 250ml [500ml] cold water to a pot with a lid and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 10-12 min or until all the water has absorbed and the rice is cooked

Once cooked, remove from the heat and keep covered until serving

Whilst the rice is cooking, drain and rinse the sweetcorn

Trim, then slice the spring onions

Chop the cherry tomatoes into quarters

Peel, finely chop (or grate) the garlic

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat

Once hot, add the jumbo king prawns and cook for 6-7 min or until the prawns are cooked through

Meanwhile, chop the lime[s] in half

Combine the juice of 1/2 [1] lime with the chipotle paste, mayonnaise and a pinch of salt in a small bowl – this is your chipotle-lime mayo

Cut the remaining lime into 2 [4] wedges

Remove the largest outer leaves from the little gem lettuce[s] and set aside, shred the inner core[s]

Once the prawns are almost cooked, add the chopped garlic, chilli flakes (can't handle the heat? Go easy!) and dried oregano and cook for 1 min

Add the drained sweetcorn and cooked rice to the pan with a pinch of salt

Remove the pan from the heat then add the chopped spring onion, cherry tomatoes and shredded little gem core and give everything a good mix up – this is your spicy jumbo prawn rice
