Cooking Instructions
Instructions for 2 people (double for 4)

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Cut the potatoes (skins on) into thin chips

Add the chips to a baking tray with a generous drizzle of vegetable oil and a pinch of salt and pepper

Give everything a good mix up and put the tray in the oven for an initial 10 min

While the chips are cooking, peel and grate the shallot[s]

Add the grated shallotpork mincepanko breadcrumbs and 1/2 the dried oregano (save the rest for later!) to a large bowl with a generous pinch of salt and pepper

Crumble in half the feta and mix thoroughly until fully combined (clean hands is the best way!) – this is your pork mixture

Divide the pork mixture into 6 [12] and shape into meatballs – these are your pork & feta keftedes

Once the chips have had 10 min, add the keftedes to one side of the tray

Return the tray to the oven for 15-20 min or until everything is cooked through (no pink meat!)

Tip: You may need 2 trays if you are cooking for 4!

Whilst everything is in the oven, finely dice half the cucumber

Grate the remaining cucumber

Peel and finely chop (or grate) the garlic

Strip the mint leaves from their stems and chop them roughy, discard the stems

Squeeze the water out of the grated cucumber and add it to a bowl along with the chopped mint, chopped garlic (don't like raw garlic? Go easy!) and natural yoghurt

Season with salt and pepper and stir it all together – this is your tzatziki

Chop the remaining feta into small cubes

Dice the tomato[es] finely

Add the sliced black olives, feta cubes and diced tomato to a bowl with the diced cucumber, remaining dried oregano, a drizzle of olive oil and a generous grind of black pepper

Gently mix it all together – this is your Greek salad
