Cooking Instructions
Instructions for 2 people (double for 4)
1 2449 - Meatless Sausages & Sweet Potato Mash

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Boil a full kettle

Lightly oil a baking tray with 1/2 tbsp [1 tbsp] vegetable oil and add the meat-free sausages

Put the tray in the oven for 20-25 min or until cooked through and golden

Peel and chop the sweet potatoes into bite-sized pieces

Add the chopped sweet potato to a pot of boiled water and bring to the boil over a high heat

Cook for 10-15 min or until fork-tender

Whilst the potatoes are cooking, rip the leaves off the spring greens, discard the tough stalks, then layer the leaves over each other, roll them up and slice into thin strips

Cut 2 [4] pieces of tin foil approx. the size of A3 paper and layer them over each other

Add the sliced spring greens to the middle with 2 tbsp [4 tbsp] water

Scrunch the edges of the foil around the greens to form 1 [2] sealed parcel[s]

Once the sausages have had an initial 10 min, add the parcel to the tray

Put the tray in the oven for 15 min or until the spring greens are tender and the meat-free sausages are cooked through

Dissolve 1/2 [1] Knorr vegetable stock cube in 250ml [450ml] boiled water

Heat a small pan with a knob of butter over a medium heat

Once melted, add 1/2 tbsp [1 tbsp] flour and cook for 30 secs, stirring to form a paste

Add the vegetable stock to the pan with the Marmite

Bring to the boil over a high heat and cook for 5-6 min or until thickened – this is your gravy

Once the sweet potatoes are cooked, drain and return them to the pot

Add a knob of butter and a pinch of salt and mash them until smooth – this is your sweet potato mash
