Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7
Tip: You'll only need the oven to heat your wraps, you can always pop them in the microwave if you prefer!
Peel the red onion[s] and slice a few rings off, as finely as you can
Finely chop the remaining onion
Heat a large, wide-based pan (preferably non-stick) with 1 tbsp [2 tbsp] vegetable oil over a medium-high heat
Once hot, add the chopped onion and cook for 2-3 min or until starting to soften
Once starting to soften, add the meat-free mince and cook for 5-6 min or until browned
Whilst the mince is browning, chop the lime[s] in half
Add the onion rings and juice of 1/2 [1] lime to a small bowl with a pinch of salt
Set aside for later – this is your pickled onion
Peel and finely chop (or grate) the garlic
Once the mince has browned, add the chopped garlic, oregano, cumin and smoked paprika to the pan and cook for 1 min
Add 50ml [100ml] water and the soy sauce and cook for 4-5 min or until the mince is cooked and coated in the spices
Combine the juice of the remaining lime with the free-from mayo and a pinch of salt – this is your lime mayo
Remove 6 [12] outer leaves from the little gem lettuce and give them a rinse, then set aside
Shred the inner core
Chop the coriander finely, including the stalks
Add the tortillas to a baking tray
Put them in the oven for 2-3 min or until they're warmed through
Tip: Alternatively, pop them on a plate and microwave for 1-2 min, or until warmed through
Spread the lime mayo over the warmed tortillas
Top with the little gem leaves, spiced mince, shredded little gem and pickled onion
Garnish with the chopped coriander
