Cooking Instructions
Instructions for 2 people (double for 4)
1

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Cut the potatoes (skins on) into thin chips

Add the chips to a baking tray with a generous drizzle of vegetable oil and a pinch of salt and pepper

Give everything a good mix up and put the tray in the oven for 20-25 min or until golden and crisp

2

While the chips are cooking, peel and finely chop (or grate) the garlic

Peel and grate 1/2 [1] red onion

Slice the remaining red onion finely and set aside for later

3

Add the lamb mince to a bowl with the panko breadcrumbs, ground cumin, dried oregano and grated red onion

Add 1/2 tsp [1 tsp] salt and half of the chopped garlic (save the rest for later!) and mix thoroughly until fully combined (clean hands is the best way!)

4

Cut 2 [4] A3 size sheets of non-stick baking paper

Put the lamb mixture between the two sheets and using a rolling pin, roll it out until approx. the thickness of a pound coin

Peel off the top baking sheet and transfer the lamb to a large baking tray

Tip: Cooking for 4? Do this twice!

Add the tray to the oven for 18-20 min or until cooked through and browned

5

Whilst the lamb is cooking, wash and finely shred the little gem lettuce

Slice the tomato[es] into wedges

Cut the red chilli[es] in half lengthways, deseed (scrape the seeds out with a teaspoon) and chop finely

Combine the remaining chopped garlic (not a fan of garlic? Just add a little!) to a bowl with the mayo, a pinch of salt and a drizzle of olive oil – this is your garlic mayo

6

Add the chopped red chilli (can't handle the heat? Go easy!) to a bowl with the tomato paste, white wine vinegar, 4 tbsp [8 tbsp] cold water and a pinch of salt and sugar

Give it a good mix up – this is your chilli sauce

Once the chips are almost done, add the pittas to the tray and return the tray to the oven for 3-4 min or until warmed through

7

Once the lamb has browned, remove from the oven and pat dry with kitchen paper

Transfer the lamb to a clean board and slice into long strips – this is your lamb doner meat
