Before you begin...

Get all your ingredients and equipment ready

Now, let's get started!

Boil a kettle

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat

Once hot, add the diced chicken and cook for 4-5 min or until cooked through (no pink meat!)

Meanwhile, slice the cucumber[s] finely

Add the sliced cucumber to a bowl with the rice vinegar, a pinch of sugar and the chilli flakes (can't handle the heat? Go easy!) and give everything a good mix up – this is your pickled cucumber

Remove the coconut cream from the sachet[s] and chop it roughly

Dissolve the chopped coconut cream in 100ml [200ml] of boiled water

Once dissolved, add the peanut buttersoy sauce and chilli jam and give everything a good mix up – this is your peanut sauce

Squeeze the pouch[es] of steamed brown basmati rice to separate the grains

Tear the top corner of the pouch[es] (just a little!) and microwave for 2 min or until piping hot

Tip: If you're cooking two pouches, pop them in together but increase the microwave cook time accordingly

Add the peanut sauce to the pan, give everything a good mix up and cook for 1-2 min further or until the sauce is starting to thicken – this is your satay chicken
