Cooking Instructions

1 Italian Sausage, Basil & Courgette Salad

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Add the Cumberland sausages to a baking tray (use tin foil to avoid mess!)

Put the tray in the oven for 20-25 min or until the sausages are golden and cooked through

Meanwhile, chop the basil finely, including the stalks

Chop the baby plum tomatoes in half

Combine the Dijon mustard, chopped basil, balsamic vinegar, and 2 tbsp [4 tbsp] olive oil with a pinch of salt and sugar in a very large bowl and give it a good mix up – this is your Italian dressing

Peel lengths off the courgette[s] until you end up with a pile of courgette 'ribbons'

Shave the Italian hard cheese with a peeler, until you end up with a pile of cheese shavings

Once you can't peel anymore, crumble the remaining cheese

Tear the ciabatta[s] into bite-sized pieces

Add the ciabatta pieces to a separate baking tray with the dried oregano, a drizzle of olive oil and a pinch of salt and give everything a good mix up

Put the tray in the oven for 5-6 min or until golden and crisp

Once the sausages are done, remove them from the oven and slice them on a diagonal into bite-sized pieces
