Cooking Instructions

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Slice 1/2 [1] red onion very finely

Peel and finely dice (or grate) the remaining red onion

Peel and finely chop (or grate) the garlic

Chop half the parsley finely, including the stalks

Add the beef mince, panko breadcrumbsdiced red onion, chopped garlic, chopped parsley, dried oregano and half the dried chilli flakes (can't handle the heat? Go easy!) to a bowl with a very generous pinch of salt and pepper

Give everything a good mix up until fully combined (clean hands is the best way)

Divide the beef mixture into 6 [12] and roll into small sausage shapes – these are your Cypriot-style kebabs

Lightly oil a baking tray with vegetable oil and add the Cypriot-style kebabs

Put the tray in the oven for 10-12 min or until cooked through and browned

Cut the cucumber in half lengthways, then slice roughly on a diagonal

Dice the tomato[es]

Roughly tear the remaining parsley

Add the wholemeal pittas to a baking tray with a drizzle of olive oil

Sprinkle over the remaining dried chilli flakes (not a fan for spice? Just add a little!) and season with a pinch of salt

Put the tray in the oven for 2-3 min or until warmed through – these are your chilli pittas

Roll the lemon[s] with your hand on a hard surface (to release more juice) and cut in half

Add the sliced cucumber, diced tomato, remaining red onion and torn parsley to a large bowl

Add the natural yoghurt with 2 tbsp [4 tbsp] olive oil, the juice of 1/2 [1] lemon, half the sumac and a very generous pinch of salt and pepper

Give everything a good mix up – this is your sumac salad

Chop the remaining lemon into wedges and the warmed chilli pittas in half
