Before you begin...

Get all your ingredients and equipment ready

Skim through these steps, then wash your fruit and veg

Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 mins)

Now, let's get started!

Boil half a kettle

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat

Once hot, add the diced chicken and cook for 7-8 min or until cooked through (no pink meat!)

Note: Please make sure you cook your chicken thoroughly (until piping hot!) as cooking equipment varies

Meanwhile, cut the cucumber into quarters lengthways, then slice into batons

Dissolve the Knorr chicken stock cube[s] in 200ml [400ml] boiled water

Add the couscous to a heat-proof bowl with the stock, cover and set aside

Fluff with a fork before serving

Strip the mint leaves from their stems and chop them roughly, discard the stems

Roll the lemon[s] with your hand on a hard surface (to release more juice) and cut in half

Once the chicken is cooked through, add the roasted garlic paste and ground coriander

Give everything a good mix up and cook for 1-2 min further – this is your garlicky coriander chicken

Meanwhile, combine the natural yogurt, chopped mint (reserve some for garnish), the juice of 1/2 [1] lemon, a drizzle of olive oil and a pinch of salt and pepper

Give everything a stir – this is your minty yogurt

Add the remaining lemon juice to the couscous and fluff with a fork
