After a long day, bacon makes everything better. So for a speedy weeknight salad, mix crisp bacon and sweet chilli jam with warm, satisfying lentils, avocado and feta. Sizzle, stir, drizzle, done!

Before you begin...
Get all your ingredients and equipment ready
Skim through these steps, then wash your fruit and veg
Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 mins)
Now, let's get started!
Heat a large, dry, wide-based pan (preferably non-stick) over a medium-high heat
Once hot, add the smoked streaky bacon to the pan and cook for 3-4 min on each side or until golden and crisp
Once the bacon is crisp, add it to a plate lined with kitchen paper and set aside, reserving the pan
Meanwhile, drain the canned lentils
Cut the avocado[s] in half lengthways, around the stone[s]
Remove the stone[s] using a teaspoon
Scoop the avocado out of the skin[s] using a spoon and slice it finely, lengthways
Return the pan to a medium-high heat with any remaining oil and add the drained lentils along with half of the chilli jam and a pinch of salt and pepper
Mix it all together and cook for 1-2 min until warmed through
Whilst the lentils are cooking, add the remaining chilli jam to a bowl along with the cider vinegar and 1 tbsp [2 tbsp] olive oil and give it a good mix up – this is your chilli jam dressing
Transfer the cooked bacon to a board and chop roughly
Add the hot lentils to a bowl with the rocket leaves and half of the chopped bacon and give everything a good mix up – this is your lentil & bacon salad
Serve the lentil & bacon salad with the sliced avocado over the top
Crumble over the feta and drizzle with the chilli jam dressing
Top with the pumpkin seeds and remaining chopped bacon
