Before you begin...
Get all your ingredients and equipment ready
Skim through these steps, then wash your fruit and veg
Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 mins)
Now, lets get started!
Boil a full kettle
Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a high heat
Once the pan is very hot, add the beef strips and cook for 3-4 min until browned
Meanwhile, add the medium egg noodles to a pot and cover them with boiled water until fully submerged
Bring to the boil over a high heat and cook for 5-6 min or until cooked with a slight bite
Once done, drain, stir through a drizzle of vegetable oil and set aside
Tip: The oil will stop the noodles from sticking together!
Rip the green leaves from the pak choi and set them aside
Chop the white bases into rough, large pieces
Discard the tough stalks
Slice the red chilli[es] into rounds
Once the beef strips have browned slightly, add the ginger & garlic paste and cook for 1 min until fragrant
Once fragrant, add the chopped white parts of the pak choi and cook for 1-2 min until softened
Add the rice wine vinegar, soy sauce, pak choi leaves and drained noodles and give everything a good mix up
Cook for 1 min until the sauce has started to stick to the noodles – these are your beef & pak choi noodles
Serve the beef & pak choi noodles in bowls
Tear over the coriander and garnish with the sesame seeds and chilli rounds (can't handle the heat? Go easy!)
