Boil a kettle
Break the wholewheat noodle nests in half over a pot and cover with boiled water until fully submerged
Bring to the boil over a high heat and cook for 5-7 min until tender with a slight bite, then drain under cold water and set aside
Meanwhile, peel and finely slice the red onion[s]
Peel (scrape the skin off with a teaspoon) and finely chop (or grate) the ginger
Peel and finely chop (or grate) the garlic
Roll the lime[s] with your hand on a hard surface (to release more juice!) and cut into quarters
Heat a large, wide-based pan (preferably non-stick) with a large drizzle of vegetable oil over a medium heat
Once hot, add the sliced onion and a pinch of salt and cook for 3-4 min or until softened
Once softened, add the chopped garlic and ginger and cook for a further 1 min
Add the pork mince, chilli flakes (can't handle the heat? Go easy!) and 1 tsp [2 tsp] sugar to the pan and cook for 6-7 min, breaking the mince up with a wooden spoon as you go
Once cooked, add the soy sauce with the juice of 1/2 [1] lime to the pan
Reserve the remaining lime wedges for later
While the pork is cooking, shred the little gem lettuce
Top, tail and finely slice the radishes
Bash the roasted peanuts in the bag with a rolling pin
Pick the mint leaves from their stems and roughly chop, discarding the stems
Add the shredded lettuce, sliced radishes, crushed peanuts, chopped mint leaves, drained noodles and pork mince, including any pan juices, to a large bowl and give everything a good mix up
Season generously with salt and pepper – this is your larb salad
Serve the larb salad and garnish with the remaining lime wedges
