1 Sweet Potato & Chorizo Hash With Avocado

Chop the sweet potatoes (skins on) into small bite-sized pieces

2 Sweet Potato & Chorizo Hash With Avocado

Add the chopped sweet potato to a microwaveable bowl

Put the bowl in the microwave for 5-8 min or until softened

3 Sweet Potato & Chorizo Hash With Avocado

While the sweet potato cooks, peel and finely slice the red onion[s]

Peel and finely chop (or grate) the garlic

4 Sweet Potato & Chorizo Hash With Avocado

Heat a large wide-based pan (preferably non-stick) with 1 tbsp [2 tbsp] vegetable oil over a medium-high heat

Once hot, add the cooked sweet potato, diced chorizo and sliced red onion with a pinch of salt and cook for 5-7 min until the chorizo is cooked through and everything is beginning to crisp

Tip: Stir as little as possible to give the potatoes a chance to brown

5 Sweet Potato & Chorizo Hash With Avocado

Meanwhile, cut the avocado[s] in half lengthways, around the stone[s]

Remove the stone[s] using a teaspoon and discard

Scoop the avocado out of the skin[s] using a spoon

Slice the avocado finely

Once everything is beginning to crisp, add the chopped garlic and ground cumin and cook for 1 min further until fragrant

Add the baby leaf spinach, give everything a good mix up and cook for a further 1-2 min or until wilted – this is your sweet potato & chorizo hash

7 Sweet Potato & Chorizo Hash With Avocado

While the spinach wilts, heat another large, wide-based pan (preferably non-stick with a matching lid) over a medium-low heat with a drizzle of vegetable oil

Crack the eggs into the pan

Cover and cook for 2 min or until done to your liking

Tip: Give your eggs a little shake before you crack them for perfectly centred yolks!
