Cooking Instructions
Instructions for 2 people (double for 4)
1 Spicy Pork & 'Nduja Meatball Ciabatta

Preheat the oven to 200°C/ 180°C (fan)/ 395°F/ Gas 6

Cut the potatoes (skins on) into wedges

Add the potato wedges to a baking tray with a generous drizzle of vegetable oil and pinch of salt and give everything a good mix up

Put the tray in the oven and cook for 30 min or until golden and crispy

2 Spicy Pork & 'Nduja Meatball Ciabatta

While the potato wedges are cooking, combine the pork mince, 'Nduja and panko breadcrumbs in a bowl with a pinch of salt and pepper and stir it all together until the 'Nduja and breadcrumbs are fully incorporated

Divide the mixture into 6 [12] and shape them into meatballs

3 Spicy Pork & 'Nduja Meatball Ciabatta

Add the meatballs to a separate baking tray (use baking paper to avoid mess!) and put the tray in the oven for 15 min or until cooked through

Boil half a kettle

4 Spicy Pork & 'Nduja Meatball Ciabatta

While the meatballs are cooking, peel and finely dice the brown onion[s]

Peel and finely chop (or grate) the garlic

Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium heat

Once hot, add the diced onion and garlic with a pinch of salt and cook for 5-6 min or until starting to soften

5 Spicy Pork & 'Nduja Meatball Ciabatta

While the onion softens, grate the cheddar cheese

Cut the ciabatta rolls in half

Once the onion has softened, add the tomato paste, dried oregano and half the balsamic vinegar (save the rest for later!) with 100ml [200ml] boiled water and a pinch of salt and sugar

Cook for 3-4 min or until thickened

6 Spicy Pork & 'Nduja Meatball Ciabatta

Once the meatballs are done, transfer them to the thickened sauce and stir together until they're fully coated

Add the halved ciabattas, cut-side up, to the tray and put them in the oven for 1-2 min or until they are starting to crisp

Tip: This will stop them from going soggy when you add the meatballs!

7 Spicy Pork & 'Nduja Meatball Ciabatta

Once starting to crisp, top the bottom of the ciabatta with the meatballs and any remaining sauce

Top the meatballs with the grated cheese and return the tray to the oven for 3-4 min further or until the cheese has melted – this is your spicy pork & 'Nduja meatball ciabatta

Combine the remaining balsamic vinegar with 1 tbsp [2 tbsp] olive oil – this is your balsamic dressing
