Ease is king with this tray bake. Apple pairs perfectly with Cumberland sausages and root veg, served with kale salad. Let the oven do the hard work!

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7
Boil a kettle
Top, tail and chop the carrot[s] (skins on) into small bite-sized pieces
Chop the potatoes (skins on) into small bite-sized pieces
Top, tail and chop the parsnip[s] (skins on) into small bite-sized pieces
Cut the apple[s] into wedges, discarding the core
Crush the garlic with the side of a knife, keeping the skins on
Dissolve the Knorr chicken stock cube[s] and onion marmalade in 300ml [600ml] boiled water
Add the chopped potatoes, carrots, parsnips, apple wedges, bay leaf[ves] and crushed garlic to a large, deep baking tray (or oven-proof dish)
Tip: Don't overcrowd the tray, use two if you need to!
Add a drizzle of olive oil and season with a pinch of salt and pepper
Add the chicken stock to the tray with the Cumberland sausages
Put the tray in the oven and cook for 40-45 min or until the vegetables are tender and the sausages are golden and cooked through
Use this time to clear up, set the table, have a cup of tea or simply chill!
Once done, combine the balsamic vinegar and 1 tbsp [2 tbsp] olive oil with a pinch of salt in a large bowl
Add the baby kale and give everything a good mix up
Squeeze the garlic out of the skins, discarding the skin
Serve the sticky sausage, apple & root veg bake with the salad to the side
Sprinkle the pumpkin seeds all over
