Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Boil a kettle

Top, tail and chop the carrot[s] (skins on) into small bite-sized pieces

Chop the potatoes (skins on) into small bite-sized pieces

Top, tail and chop the parsnip[s] (skins on) into small bite-sized pieces

Cut the apple[s] into wedges, discarding the core

Crush the garlic with the side of a knife, keeping the skins on

Dissolve the Knorr chicken stock cube[s] and onion marmalade in 300ml [600ml] boiled water

Add the chopped potatoes, carrots, parsnips, apple wedges, bay leaf[ves] and crushed garlic to a large, deep baking tray (or oven-proof dish)

Tip: Don't overcrowd the tray, use two if you need to!

Add a drizzle of olive oil and season with a pinch of salt and pepper

Add the chicken stock to the tray with the Cumberland sausages

Put the tray in the oven and cook for 40-45 min or until the vegetables are tender and the sausages are golden and cooked through

Use this time to clear up, set the table, have a cup of tea or simply chill!

Once done, combine the balsamic vinegar and 1 tbsp [2 tbsp] olive oil with a pinch of salt in a large bowl

Add the baby kale and give everything a good mix up
