Cooking Instructions

Boil a full kettle

Dissolve the Knorr chicken stock cube[s] in 600ml [1.2L] boiled water

Strip the thyme leaves from their stems and chop them finely, discard the stems

Trim, then slice the spring onions finely

Peel and chop (or grate) the garlic finely

Heat a large, wide-based pan (preferably non-stick) with 1 tbsp [2 tbsp] vegetable oil over a medium-high heat 

Once hot, add half the chopped spring onion (save the rest for garnish) and cook for 1 min or until beginning to soften slightly

Add the diced chorizo to the pan and cook for 3-4 min or until starting to brown

Chop the cherry tomatoes in half

Add the chopped garlic, chopped thymesmoked paprika and half of the chopped cherry tomatoes to the pan and mix well

Add the arborio rice and stir to fully coat the grains in oil 

Add 1/3 of the chicken stock and stir continuously with a wooden spoon until it has absorbed

Continue to add the stock, a ladle at a time, stirring more or less constantly for 15-20 min, until all the stock is absorbed and the rice is cooked

Add the remaining chopped cherry tomatoes when the rice is nearly cooked – this is your chorizo and cherry tomato risotto

Once cooked, remove the risotto from the heat then add the grated Italian hard cheese and a knob of butter and stir through

Taste for seasoning adding more salt and pepper if needed
