Cooking Instructions
Instructions for 2 people (double for 4)
1 Sausages & Slaw

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Cut all the potatoes to roughly equal size (approx. 3cm chunks)

Add to a mixing bowl and coat well with 1 tbsp (2 tbsp) of olive oil and the dried dill 

Season generously with salt and pepper and mix well to coat evenly 

2 Sausages & Slaw

Lay the potatoes out on a baking tray

Snuggle the sausages in amongst them

Put the tray in the oven for 30-40 min or until both are golden and crisp

Tip: Use two trays if you are cooking for 4, so there is space inbetween the potatoes

3 Sausages & Slaw

Meanwhile, combine the mayonnaise, horseradish, apple cider vinegar and 1 tbsp (2 tbsp) of olive oil in a large mixing bowl

Slice the spring onions finely, discarding the root ends

Add the spring onions to the horseradish mayo mix and mix together

4 Sausages & Slaw

Drain the beetroot of its juice (you will not need it later)

Peel and top and tail the carrot(s)

Quarter the apple(s) (skin on) and discard the inner core(s)

5 Sausages & Slaw

Set a sieve (or colander with small holes) over a bowl

Grate the beetroot, carrot, and apple into the sieve

6 Sausages & Slaw

Squeeze the juice out of all of the grated goods with your hands

Discard the juice (or drink it for an immune boost!)

7 Sausages & Slaw

Add the squeezed beetroot, apple and carrot to the horseradish mayo and season with plenty of salt and pepper

Mix well - this is your slaw

Refrigerate the slaw until your sausages and potatoes are ready
