Cooking Instructions
Instructions for 2 people (double for 4)
1 2269 - Sausages, Chips & Curry Sauce

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7 

Boil a full kettle

Cut the potatoes (skins on) into chips

Add the chips to a baking tray with a generous drizzle of vegetable oil and a pinch of salt and pepper and give everything a good mix up

Add the Cumberland sausages to a separate baking tray (use tin foil to avoid mess!)

Put both trays in the oven for 20-25 min or until the sausages are cooked through (no pink meat!) and the chips are golden and crisp

While the sausages are cooking, peel and finely chop (or grate) the ginger

Peel and finely chop (or grate) the garlic

Heat a large, wide-based pan (preferably non-stick) over a medium-low heat

Once the pan is hot, add a large knob of butter with the chopped ginger, garlic, ground turmeric and curry powder

Cook for 4-5 min or until fragrant, stirring frequently

Tip: Add a drizzle of vegetable oil if the pan's looking a little dry

Meanwhile, add the green beans to a pot, cover them with boiled water (just enough to cover them) with a pinch of salt

Bring to the boil over a high heat and cook for 3-4 min or until tender, then drain and cover to keep warm

Season with a pinch of salt just before serving

Whilst the green beans are cooking, dissolve the cornflour in 50ml [100ml] cold water in a small bowl and set aside for later – this is your cornflour slurry 

Once the ginger and garlic are fragrant, add the soy sauce with 100ml [150ml] boiled water and bring to the boil over a high heat

 

7 2269 - Sausages, Chips & Curry Sauce

Once boiling, add the cornflour slurry and cook for a further 30 secs or until thickened, stirring continuously – this is your curry sauce
