Cooking Instructions

1 Satay Pork Rice With Cucumber Salad

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat

Once hot, add the pork mince and cook for 4-6 min or until browned and starting to caramelise, breaking it up with a spoon as you go

Meanwhile, boil a kettle

Peel (scrape the skin off with a teaspoon) and chop (or grate) the ginger

Meanwhile, combine the peanut butter, chilli jam, 1 tsp [2 tsp] sugar and 2 tbsp [3 tbsp] boiled water in a small bowl

Add the soy sauce and the juice of 1/2 [1] lime and give everything a good mix up – this is your satay sauce

Cut the remaining lime into 2 [4] wedges

4 Satay Pork Rice With Cucumber Salad

Once the pork mince has browned, add the ginger and cook for 1-2 min or until fragrant

Once fragrant, crumble in 1/2 [1] chicken stock cube to the pan

Add the basmati rice with 300ml [600ml] cold water to the pan and bring to the boil

Cover with a lid, reduce the heat to low and cook for 10 min or until the water is absorbed and the rice is cooked 

5 Satay Pork Rice With Cucumber Salad

Meanwhile, halve the cucumber lengthways then scrape out and discard the seeds using a teaspoon

Slice the cucumber halves finely

Trim then slice the spring onion[s] finely

Add the sliced cucumber and spring onion to a bowl

Add the rice vinegar and a generous pinch of salt

Mix well and set aside to marinate – this is your cucumber pickle

Strip the mint leaves from their stems and chop them finely

Chop the coriander finely, including the stalks

Chop the peanuts roughly (or bash them in the bag!)

Once the rice is cooked, stir through the chopped mint, coriander and peanuts – this is your pork rice
