You'll bash these pork steaks flat, a technique known as 'escaloping'. You'll learn how to make a homemade apple sauce, (which is ever so easy) before piling the sauce and cheese over the steaks so that they melt in the oven. Served with crispy potatoes and mustard green beans. Sorry for being a bit cheesy, but this dish is the apple of our eye!

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7
Cut the potatoes (skins on) into bite-size pieces
Add them to a baking tray, drizzle with 1-2 tbsp vegetable oil & season with salt
Put them in the oven for 25 min or until golden & crisp
Meanwhile, peel the apple[s]
Cut them into rough pieces, discarding the core[s]
Add the apple to a pot (with a matching lid) with 50ml (100ml) cold water
Bring to the boil over a medium heat
Cover with a lid and cook for 10-15 min until the apple is softened
Once softened, remove from the heat and mash them thoroughly with a potato masher - this is your apple sauce
Place the pork steaks close together on a clean chopping board and cover with a sheet of greaseproof paper or cling film
Using a rolling pin (or another heavy implement) bash the steaks so that are 0.5cm thick
Rub the steaks either side with 1 tsp [2 tsp] vegetable oil and season with salt
Heat a large pan (preferably non-stick) over a high heat
Once hot, add the pork steaks and cook on each side for 1 min
Transfer the steaks to a plate and set aside
Meanwhile, boil a kettle
Trim the ends off the green beans
Add them to a pot of boiling water with a pinch of salt and bring to the boil over a high heat
Cook for 7 min or until tender
Once cooked, drain and return the beans to the cooking pot, drizzle with a little olive oil and stir through the wholegrain mustard
Add the pork steaks to a baking tray (use tin foil to avoid mess!)
Divide the apple sauce between them and spread it evenly over
Top each steak with a piece of cheddar
Put them in the oven for 5 min or until the cheddar has just melted but not coloured
Serve the melted cheesy steaks with the roast potatoes and green beans
