Preheat the oven to 180°C/ 160°C (fan)/ 400°F/ Gas 6
Boil half a kettle
Add the red wine vinegar, 1 tbsp [2 tbsp] sugar and 2 tbsp [4 tbsp] boiled water to a bowl
Slice 1 [2] red onion[s] as thinly as you can
Add the sliced red onion to the bowl and set aside to pickle – these are your pickled onions
Drain and rinse the black beans
Heat a pot with a lid over a medium-high heat with a drizzle of vegetable oil and the smoked paprika
Cook for 10-20 secs or until fragrant
Add the black beans, soy sauce and 150ml [300ml] boiled water and season with salt and pepper
Cook, covered for 10 min or until the beans are very soft
Meanwhile, finely dice the remaining red onion[s]
Finely chop (or grate) the garlic
Zest (try to grate lightly with a micro-plane or sharp box grater and avoid grating the white pith, as this is very bitter!) and juice the lime[s]
Core and slice the apple[s] into matchsticks
Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil
Once hot, add the diced onion with a pinch of salt
Cook over a medium heat for 3-4 min or until softened
Add the chipotle paste, chopped garlic and pork mince
Season generously with salt and pepper and cook for 5-7 min until crispy and cooked through (no pink meat!)
While the pork mince is cooking, combine the apple matchsticks, lime juice and zest with the mayo – this is your apple slaw
Add the tortillas to a baking tray
Put them in the oven for 2-3 min or until warmed through
Once the black beans have softened, add a very large knob of butter to the pot and mash them to a coarse paste – these are your re-fried beans
Drain the pickled onions and discard the liquid
Set the warmed tortillas, pork and the re-refried beans in the centre of the table, ready to share
Garnish the assembled tacos with the apple slaw and pickled onions
