Cooking Instructions

1 Paprika Pork Burger With Apple Salad

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Cut the potatoes (skins on) lengthways into wedges

Add them to a baking tray, drizzle them with vegetable oil, then season with half of the smoked paprika and a large pinch of salt, and put them in the oven for 25 min until they're crisp

2 Paprika Pork Burger With Apple Salad

While the potato wedges are cooking, chop the spring onion[s] finely, keeping the white and green parts separate

Combine the pork mince with the remaining paprika and the white spring onion in a bowl and season very generously with salt and pepper

Divide and shape the mince into 2 [4] wide patties and freeze until step 6 (this helps them hold their shape whilst cooking)

3 Paprika Pork Burger With Apple Salad

Heat a large, wide-based pan (preferably non-stick with a matching lid) over a high heat

Once hot, add the brioche, cut-side-down, and cook for 3 min or until lightly toasted

Once toasted, set aside until serving and reserve the pan

4 Paprika Pork Burger With Apple Salad

Peel the red onions whole, then slice into thin rings

Return the reserved pan, with a drizzle of olive oil, to a medium heat 

Once hot, add the onion rings and cook for 4-5 min or until the onions are soft 

Once softened, set aside until serving and reserve the pan

These are your caramelised onion rings

5 Paprika Pork Burger With Apple Salad

Meanwhile, combine the red wine vinegar, mayonnaise, spring onion greens, 2 tbsp [4 tbsp] olive oil and a pinch of salt and pepper – this is your salad dressing

Slice the apple[s] (skin[s] on) thinly and add it to the salad dressing, mixing to coat – this is your dressed apple

6 Paprika Pork Burger With Apple Salad

Return the reserved pan to a high heat

Once hot, add the cooled paprika pork burgers, cover with a lid and cook for 3-4 min per side or until cooked through, flattening and pressing down with a spatula halfway through

7 Paprika Pork Burger With Apple Salad

Shred the little gem lettuce

Add the shredded lettuce to the dressed apple and give everything a good mix up – this is your apple salad
