Preheat the oven to 200°C/ 180°C (fan)/ 395°F/ Gas 6
Chop the potatoes (skins on) into chips
Add the chips to a baking tray with a drizzle of vegetable oil and a pinch of salt and give everything a good mix up
Add the pineapple slices (save the juice for later!) to a separate tray
Put both trays in the oven for 25 min or until the pineapple is golden and the chips are crispy
Meanwhile, heat a large, dry, wide-based pan (preferably non-stick) over a medium heat
Once hot, add the cumin seeds and cook for 1-2 min or until fragrant
Trim, then finely slice the spring onions, separating the white and green parts
Combine the pork mince, soy sauce, panko breadcrumbs, toasted cumin seeds, smoked paprika and whites of the spring onion in a large bowl
Mix, then knead thoroughly until fully combined
Shape into 2 [4] burger patties
Tip: kneading the patties for longer will make them more tender!
Return the pan to a medium heat with a drizzle of vegetable oil
Once hot, add the burger patties to the pan and cook for 5-6 min on each side or until cooked through
Tip: push the patties down with a spatula so they cook evenly
Meanwhile, slice the brioche buns in half and add them, cut-side up, to the pineapple tray and cook for 3-4 min or until golden
Meanwhile, combine the mayonnaise with 1 tbsp [2 tbsp] reserved pineapple juice and the cayenne pepper (Can't handle the heat? Go easy!) and give everything a good mix up – this is your spicy mayo
Top the base of the buns with some of the spicy mayo, a burger patty and the roasted pineapple
Serve the burger with the chips and remaining spicy mayo to the side
Garnish with the spring onion greens
