Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7
Cut the potatoes (skins on) into chips
Add the chips to a baking tray with a generous drizzle of vegetable oil and a pinch of salt
Put the tray in the oven for 25-30 min or until golden and crisp
Meanwhile, add the pork mince, panko breadcrumbs and soy sauce to a bowl and give everything a good mix up until fully combined (clean hands is the best way!)
Divide the pork mince into 2 [4] burger patties
Add the burger patties to a separate baking tray and put the tray in the oven for 15-20 min or until cooked through (no pink meat!)
While the burger patties are cooking, trim, then slice the spring onion[s] lengthways into thin strips
Chop the cucumber into discs
Slice each cucumber disc into matchsticks
Add the cucumber matchsticks to a bowl with the rice vinegar and a pinch of salt – this is your cucumber salad
Heat a large, wide-based pan (preferably non-stick) over a medium-high heat
Cut the brioche rolls in half
Once hot, add the brioche, cut-side down, and cook for 3 min or until toasted and charred, then set them aside until serving
Once the brioche are toasted, wipe the pan clean and return it to a medium heat
Add the hoisin sauce with 1 tbsp [2 tbsp] cold water and cook for 1 min or until warmed through
Sprinkle the black sesame seeds over the chips – these are your black sesame chips
Fill the toasted brioche buns with the pork patties and drizzle over the warm hoisin sauce
Top with the cucumber salad and spring onion strips and serve the black sesame chips to the side
