Cooking Instructions

1 Herby Pork & Egg Burger With Crispy Potatoes

Preheat the oven to 200°C/ 180°C (fan)/ 400°F/ Gas 6

Cut the potatoes (skins on) into bite-sized cubes

Add the cubed potatoes to a baking tray with the smoked paprika, a drizzle of vegetable oil and a generous pinch of salt 

Put the tray in the oven and cook for 20-25 min or until the potatoes are brown and crispy – these are your crispy paprika potatoes

While the potatoes are cooking, combine the pork mincepanko breadcrumbs, Henderson's Relish, soy saucedried oregano and dried sage in a bowl with a pinch of salt and black pepper

Divide the mixture into 2 [4] in the bowl, then shape into herby pork patties and press down with your hands and refrigerate until later

Tip: Chilling the patties helps them hold their shape whilst cooking

Slice the little gem lettuce[s] into quarters

Add the lettuce quarters to a bowl with the cider vinegar, a drizzle of olive oil and a generous pinch of salt and black pepper 

Give everything a good mix up – these are your dressed lettuce quarters

4 Herby Pork & Egg Burger With Crispy Potatoes

Heat a large, wide-based pan (preferably non-stick, with a matching lid) with a drizzle of vegetable oil over a medium heat

Once hot, add the herby pork patties and cook for 3-4 min on each side or until they're cooked through

Tip: Keep pressing the patties down with a spatula to keep them flat

Meanwhile, remove the tray with the potatoes from the oven and push the potatoes to one side of the tray

Add the brioche rolls, cut side down, to the other side and put the tray back in the oven for 4-5 min to warm through

Once the herby pork patties are cooked, transfer them to a plate and cover to keep warm – these are your herby pork burgers

Keep the pan (and oil!) for the next step

Return the pan to a medium-low heat and add a drizzle of vegetable oil

Crack the eggs into the pan and season with a pinch of salt

Cover the pan with a lid and cook for 2 min or until done to your liking

Tip: Give your eggs a little shake before you crack for perfectly centred yolks!
