Cooking Instructions

1 Harissa Chorizo With White Bean Mash

Peel the potatoes and chop them into large, bite-sized pieces

Add the chopped potatoes to a pot with plenty of boiled water and a generous pinch of salt and bring to the boil over a high heat

Once boiling, reduce the heat to medium and cook for 12-15 min or until fork-tender

2 Harissa Chorizo With White Bean Mash

While the potatoes are cooking, deseed the red pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into thin strips

Peel and finely slice the red onion[s]

Peel and finely chop (or grate) the garlic

Boil a kettle

3 Harissa Chorizo With White Bean Mash

Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium-high heat

Once hot, add the pepper strips with a large pinch of salt and cook for 5 min or until they've softened slightly

Once softened, reduce the heat to low, add the chopped garlic and sliced onion with a large pinch of sugar and cook for 15 min or until softened

4 Harissa Chorizo With White Bean Mash

Meanwhile, dissolve 1/2 [1] Knorr chicken stock cube in 250ml [500ml] boiled water and stir in the harissa paste – this is your harissa stock

5 Harissa Chorizo With White Bean Mash

Heat a separate, large, wide based pan (preferably non-stick) over a medium heat

Once hot, add the chorizo and cook for 8-10 min or until starting to crisp

6 Harissa Chorizo With White Bean Mash

Once crisp, add the harissa stock to the pepper and onion pan

Increase the heat to high and cook for 2-5 min or until a glossy sauce forms - this is your harissa stew

Finely chop the parsley, including the stalks

7 Harissa Chorizo With White Bean Mash

Once the potatoes are tender, add the butter beans (no need to drain) to the same pot

Return the pan to a high heat and cook for 3 min or until the beans are warmed through, then drain everything

Add a knob of butter and a splash of milk

Season generously with salt and pepper, then mash until smooth – this is your white bean mash
