Mu Shu, Moo Shu or even Mu Xu, is a northern Chinese dish made popular in the 1960's when American Chinese cuisine was big! Here we've enhanced the flavour with untraditional harissa paste, which gives it a spicy depth of flavour. Served in lettuce boats for the crunch factor. Suits Mu Shu!

Cooking Instructions
Instructions for 2 people (double for 4)
1 Fast Mu Shu Pork Lettuce Boats

Add the basmati rice and 150ml [300ml] water to a pot with a lid and bring to the boil over a high heat

Once boiling, reduce the heat to low and cook, covered, for 10-12 min or until all the water has absorbed and the rice is cooked

Meanwhile, combine the pork mince and harissa paste with a pinch of salt and pepper - this is your harissa pork

2 Fast Mu Shu Pork Lettuce Boats

Heat a large, wide-based pan (preferably non-stick) with a matching lid, with 1 tbsp [2 tbsp] vegetable oil over a high heat

Add the harissa pork and cook for 4 min or until it's cooked through (it will no longer be pink in colour)

Meanwhile, top, tail, peel and grate the carrot[s]

Top, tail and grate the courgette[s]

Trim then slice the spring onion[s] finely

Once cooked, transfer the pork to a clean mixing bowl

Add the soy sauce and 1 tbsp [2 tbsp] sugar and mix to combine

Reserve the pan for the next step!

Return the pan to a high heat, add the grated carrot and grated courgette and cook for 2 min

Add the cooked pork back to the pan, reduce the heat to low and cook for a further 2 min, then remove from the heat and cover to keep warm until serving

Meanwhile, separate the little gem lettuce leaves and arrange them on plate

Chop the inner core to use as garnish

Stir the sliced spring onion through the pork - this is your Mu Shu Pork
