Cooking Instructions
Instructions for 2 people (double for 4)
1 Calabrese Pizza With 'Nduja

Preheat the oven to 200°C/ 180°C (fan)/ 395°F/ Gas 6

Put a large baking tray (or two) in the oven to heat up (this will stop the pizza bottoms from going soggy!)

Peel and finely chop (or grate) the garlic

 

2 Calabrese Pizza With 'Nduja

Add the tomato paste to a bowl with the chopped garlic, dried oregano and a generous pinch of salt, pepper and sugar

Add 4 tbsp [8 tbsp] cold water and a drizzle of olive oil and give everything a good mix up – this is your tomato base

3 Calabrese Pizza With 'Nduja

Drain and pat the mozzarella dry with kitchen paper (squeeze as much liquid out as you can!)

Tear the drained mozzarella into rough, bite-sized pieces

4 Calabrese Pizza With 'Nduja

Deseed the Romano pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into thin strips

Slice the red chilli[es] finely 

Tip: De-seed the chilli[es] first if you're not a fan of spice

5 Calabrese Pizza With 'Nduja

Remove the heated tray[s] from the oven and add the pizza bases

Divide the tomato base between the pizza bases and spread it evenly all over them

Top the pizzas with the ripped mozzarellasliced peppersliced chilli (can't handle the heat? Go easy!) and 'nduja

 

6 Calabrese Pizza With 'Nduja

Put the tray in the oven for 15 min or until the cheese has melted and the pizza bases are crispy – this is your Calabrese pizza with 'nduja

7 Calabrese Pizza With 'Nduja

While the pizzas are cooking, combine the balsamic vinegar with 2 tbsp [4 tbsp] olive oil and a pinch of salt and pepper – this is your balsamic dressing

Wash and drain the rocket
