This super quick bulgur dish contains the Moroccan spice blend, ras el hanout, pronounced 'raz-el-han-oot' which is a spice mix containing cumin, dried rose petals and cinnamon. We've used it here to create a really simple spiced lamb which you'll serve over a cucumber, mint and feta bulgur wheat warm salad. Mint!

Cooking Instructions
Instructions for 2 people (double for 4)
1 Speedy Minted Lamb & Feta Bulgur

Boil a kettle

Peel and finely slice the red onion[s]

 

2 Speedy Minted Lamb & Feta Bulgur

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat

Once hot, add the sliced onion with a big pinch of salt and sugar

Cook for 4 min or until softened

3 Speedy Minted Lamb & Feta Bulgur

Add the bulgur wheat to a pot with plenty of boiled water and a pinch of salt (the same as you would for pasta) and cook over a high heat for 10-15 min or until tender with a slight bite, then drain and return to the pot

4 Speedy Minted Lamb & Feta Bulgur

Stir the ras el hanout and tomato paste into the onion, then add the lamb mince, breaking it up with a spoon as you go

Reduce the heat to medium and cook for 7-10 min, then add 125ml [200ml] boiled water to create a ragu-like sauce - this is your spiced lamb ragu

Meanwhile, cut the cucumber in half lengthways

Scrape out the seeds with a teaspoon and discard 

Dice the cucumber 

6 Speedy Minted Lamb & Feta Bulgur

Strip the mint leaves from their stalks

Discard the stalks and finely chop the leaves

7 Speedy Minted Lamb & Feta Bulgur

Fluff the cooked, drained bulgur wheat with a fork

Crumble in the feta and add the diced cucumber and half of the chopped mint (save the rest for garnish)

Season with pepper - this is your cucumber and feta bulgur
