In this delicious recipe, you'll be making your own kofte with succulent British lamb and warming spices like cumin, chilli flakes and sumac, before roasting them with slices of green pepper. Served inside wraps with a crunchy salad and garlicky yoghurt, this is our Gousto twist on a kebab shop favourite!

Cooking Instructions
Instructions for 2 people (double for 4)
1 Lamb Kofte Wraps, Crunchy Salad & Garlic Yoghurt

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7 and boil half a kettle

Peel the red onion[s]

Slice 1/2 [1] red onion finely and add to a small bowl with the red wine vinegar, 50ml [80ml] boiled water, a pinch of salt and a pinch of sugar, then mix it together and set aside for later – these are your quick-pickled onions

 

2 Lamb Kofte Wraps, Crunchy Salad & Garlic Yoghurt

Dice the remaining red onion finely and add to a separate bowl with the ground cumin, sumac, turmeric and dried chilli flakes (can't handle the heat? Go easy!)

Add the lamb mince, 1 tbsp [2 tbsp] water and a generous pinch of salt and pepper and give everything a good mix up

Divide the mixture into 12 [24] balls, then shape the balls into rough sausage shapes – these are your lamb kofte

Add the lamb kofte to a tin foil-lined baking tray

Tip: Lightly oil your hands before rolling the kofte to prevent them sticking

4 Lamb Kofte Wraps, Crunchy Salad & Garlic Yoghurt

Deseed the green pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into thin strips

Add the sliced green pepper to a separate tin foil-lined baking tray with a drizzle of vegetable oil and a pinch of salt

Put both trays in the oven for 10-12 min or until the kofte are cooked through (no pink meat!) and the pepper has started to soften – these are your roasted peppers

5 Lamb Kofte Wraps, Crunchy Salad & Garlic Yoghurt

While the pepper is in the oven, peel and finely chop (or grate) the garlic

Add the chopped garlic to the natural yoghurt (don't like raw garlic? Start with a small amount!) with a drizzle of olive oil and 1 tbsp [2 tbsp] water

Season with a pinch of salt and stir well to combine – this is your garlic yoghurt

 

6 Lamb Kofte Wraps, Crunchy Salad & Garlic Yoghurt

Peel and grate the carrot[s] 

Shred the gem lettuce 

Drain the quick-pickled onions and reserve 1 tbsp [2 tbsp] of the pickling liquor

Add the grated carrot and shredded lettuce to a bowl with the reserved pickling liquor and toss it together – this is your crunchy salad

Put the tortillas on a plate and microwave for 1 min, or until warmed through

Cut the tomato[es] in half then slice finely into half moons
