Cooking Instructions
Instructions for 2 people (double for 4)

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Chop the courgette[s] into bite-sized pieces

Peel the red onions, then grate [2] red onion[s]

Chop the remaining red onion[s] into wedges

Slice the potatoes (skins on) into discs, approx. 1cm thick

Add the grated red onion, lamb mincepanko breadcrumbs, soy sauce and a pinch of salt and pepper to a large bowl

Massage thoroughly, with clean hands, until fully combined

Tip: Massage the meat longer for more tender meatballs!

Divide the lamb mixture into 10 [20] and roll into meatballs

Add the potato discs, chopped courgette and red onion wedges to a baking tray

Sprinkle over the dried oregano, drizzle with olive oil and a pinch of salt and give it a good mix up

Add the lamb meatballs to the tray

Put the tray in the oven and cook for 20-25 min or until everything is cooked through and golden – this is your Greek lamb meatball tray bake

Meanwhile, strip the mint leaves from their stems and chop them finely, discard the stems

Peel and finely chop (or grate) the garlic

Combine half the chopped mint (save the rest for garnish!), grated garlic (don't like raw garlic? Go easy!) and natural yoghurt with a drizzle of olive oil and a pinch of salt in a small bowl – this is your garlic yoghurt

Chop the parsley roughly, including the stalks
