This quick, fiery, delicious recipe takes inspiration from Xinjiang lamb, a cumin and chilli-spiked lamb dish from Northern China. You'll stir-fry British lamb with earthy cumin, fresh chilli and petals of onion. Serve it alongside spinach & coriander rice. (Dairy-free: see our FAQs for details.)

Cooking Instructions
Instructions for 2 people (double for 4)
1 Fragrant Lamb With Chilli, Ginger & Spinach

Trim, then slice the spring onions finely

Heat a medium size pot with a lid with a drizzle of vegetable oil over a medium heat 

Once hot, add the sliced spring onion and cook for 1 min

Add the basmati rice and 250ml [500ml] cold water to the spring onion and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 10-15 min or until all the water has been absorbed and the rice is cooked

Meanwhile, cut the red chilli[es] in half lengthways, deseed (scrape the seeds out with a teaspoon) and slice finely

Peel and finely slice the garlic 

Peel and chop the brown onion[s] into wedges

Peel (scrape the skin off with a teaspoon) and finely chop (or grate) the ginger

Boil a kettle

Meanwhile, heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium heat

Once hot, add the lamb mince, ground cumin and cumin seeds to the pan and cook for 4 min or until starting to crisp, breaking it up with a wooden spoon as you go

Meanwhile, add the baby leaf spinach to a colander and pour the boiled water over so that it starts to wilt

Rinse the wilted spinach under cold water until cool

Squeeze the water out of the cooled spinach, then chop it roughly

Roughly chop the coriander, reserving some leaves for garnish

 

 

6 Fragrant Lamb With Chilli, Ginger & Spinach

Add the onion wedges to the pan and cook for 3 min or until they're beginning to soften

Add the sliced chilli (Can't handle the heat? Go easy!), garlic and chopped ginger to the pan and cook for 2-3 min further or until the garlic is lightly browned

7 Fragrant Lamb With Chilli, Ginger & Spinach

Once the garlic is browned, add the Chinese rice wine, soy sauce and honey to the pan and cook for 1-2 min or until slightly sticky, then season with salt and pepper – this is your Xinjiang lamb

Meanwhile, add the chopped coriander and spinach to the cooked rice and give everything a good mix up – this is your green rice
