1 Greek Lamb Meatball Bake With Feta & Parsley

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Boil a kettle

Peel and grate the red onion[s]

2 Greek Lamb Meatball Bake With Feta & Parsley

Using clean hands, combine the lamb mince, half [all] the grated red onion and a generous pinch of both salt and pepper in a bowl and give everything a good mix up

Divide the lamb mince into 6 [12] and shape them into meatballs

3 Greek Lamb Meatball Bake With Feta & Parsley

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat

Once hot, add the meatballs and cook for 3-4 min, turning occasionally, until they're browned all over

Once the meatballs have browned, transfer them to a plate and return the pan to a medium-low heat

4 Greek Lamb Meatball Bake With Feta & Parsley

Top, tail, peel and grate the carrot[s]

Once the meatballs are done, add the grated carrot and remaining grated onion to the reserved pan with a pinch of salt and cook for 3-5 min until softened

Dissolve the Knorr beef stock cube[s] in 250ml [450ml] boiled water

Reboil a kettle

5 Greek Lamb Meatball Bake With Feta & Parsley

Once the red onion and carrot have softened add the tomato frito, dried oreganobeef stock and a pinch of sugar to the pan

Cook for 8-10 min or until reduced to a thick sauce

Once thickened, transfer the sauce to an oven-proof dish and add the reserved meatballs

Put the dish in the oven for 15-20 min until the sauce is bubbling and the meatballs are cooked through – this is your Greek lamb meatball bake

6 Greek Lamb Meatball Bake With Feta & Parsley

While the meatballs are cooking, add the bulgur wheat to a pot with plenty of boiled water and a pinch of salt

Cook over a high heat for 7-9 min or until tender with a slight bite, then drain and return to the pot

7 Greek Lamb Meatball Bake With Feta & Parsley

While the bulgur wheat is cooking, crumble the feta

Chop the parsley finely, including the stalks
