Cooking Instructions
Instructions for 2 people (double for 4)
1 Sweet Chilli Fish & Sesame Pak Choi

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Peel (scrape the skin off with a teaspoon) and finely chop (or grate) the ginger

2 Sweet Chilli Fish & Sesame Pak Choi

Add the basmati rice, chopped ginger, a pinch of salt and 300ml [600ml] cold water to a pot with a lid and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 10-15 min or until all the water has been absorbed and the rice is cooked

Once cooked, remove from the heat and keep covered until serving – this is your ginger rice

3 Sweet Chilli Fish & Sesame Pak Choi

While the rice is cooking, combine the chilli jam, chipotle paste and 1 tbsp [2 tbsp] olive oil in a bowl – this is your sweet chilli sauce

4 Sweet Chilli Fish & Sesame Pak Choi

Pat the basa fillets dry with kitchen paper and add them to a baking tray (use tin foil to avoid mess!)

Season them with a pinch of salt and spread the sweet chilli sauce over evenly

Put the tray in the oven for 12-15 min or until the fish is cooked through – this is your sweet chilli fish

Tip: Your fish is cooked when it becomes opaque and flakes easily

5 Sweet Chilli Fish & Sesame Pak Choi

While the fish is in the oven, cut the pak choi in half, separating the white base and green tops

Peel and finely slice (don't chop!) the garlic

Boil a kettle

6 Sweet Chilli Fish & Sesame Pak Choi

Heat a large, wide-based pan (preferably non-stick with a matching lid), with a drizzle of vegetable oil over a medium heat

Once hot, add the pak choi white bases and the sliced garlic and cook for 1-2 min or until the garlic has browned slightly

Add 50ml [100ml] boiled water to the pan and cook, covered, for a further 2-3 min

7 Sweet Chilli Fish & Sesame Pak Choi

While the pak choi is cooking, trim, then slice the spring onion[s] finely

Add the pak choi green tops and soy sauce to the pan and cook for 2-3 min or until the pak choi greens have wilted

Once wilted, sprinkle the pak choi with the sesame seeds – this is your sesame pak choi
