Cooking Instructions
Instructions for 2 people (double for 4)
1 Spanish Herby Cod & Chorizo Stew

Preheat the oven to 200°C/ 180°C (fan)/ 400°F/ Gas 6

Heat a large, wide-based pan (preferably non-stick with a matching lid), over a medium-high heat with a drizzle of olive oil

Once hot, add the diced chorizo and cook for 3-4 min or until golden and crisp

While the chorizo is cooking, boil a full kettle

2 Spanish Herby Cod & Chorizo Stew

Peel and cut the red onions into wedges, then separate the red onion wedges into 'petals'

Deseed the red pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into strips

Cut the waxy potatoes (skins on) into small, bite-sized pieces

Peel and finely chop (or grate) the garlic

Once the chorizo is crisp, transfer it to a plate and set aside

Return the pan to a medium-high heat and add the red onion petals, sliced red pepper and chopped potatoes with a pinch of salt and pepper 

Cook for 3-4 min or until the potatoes are starting to brown

When the potatoes have browned, add the chopped garlic and cook for 1 min further

4 Spanish Herby Cod & Chorizo Stew

Dissolve 1/2 [1] Knorr vegetable stock cube in 400ml [700ml] boiled water

Stir in the tomato paste and 1 tsp [2 tsp] sugar – this is your tomato stock

5 Spanish Herby Cod & Chorizo Stew

Add the tomato stock to the pan and cook, covered for 12-15 min or until the potatoes are fork-tender

6 Spanish Herby Cod & Chorizo Stew

While the potatoes are cooking, add the cod fillets to a baking tray (use tin foil to avoid mess)

Lay a knob of butter over each piece of cod, sprinkle over the dried oregano and season with a pinch of salt and pepper

Put the tray in the oven for 8-10 min or until the cod is cooked through - this is your herby cod

Tip: Your fish is cooked when it turns opaque and flakes easily

7 Spanish Herby Cod & Chorizo Stew

Meanwhile, chop the parsley finely, including the stalks

Once the potatoes are tender, stir a large knob of butter and half the chopped parsley into the pan – this is your Spanish chorizo stew
