Instructions for 2 people (double for 4)
1 Smoky Fish On Mash

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Boil a kettle

2 Smoky Fish On Mash

Cut the potatoes (skin on) into bite-size pieces  

Peel and roughly chop the garlic

Add the potatoes and garlic to a pot of salted boiling water and bring back to the boil over a high heat

Cook them for 15-20 min or until fork-tender

Boil a kettle again

3 Smoky Fish On Mash

Wash the spinach in a colander

Pour boiled water all over the spinach so that it wilts from the heat

Once wilted, rinse the spinach in cold water until it has cooled, then give it a good squeeze to get rid of excess water 

Boil the kettle again (last time, we promise!)

4 Smoky Fish On Mash

Chop the squeezed spinach roughly

Grate the cheddar cheese

Trim then slice the spring onion[s] finely

5 Smoky Fish On Mash

Place the smoked basa fillets on a baking tray (use foil to avoid mess!)

Drizzle them with olive oil and season with a pinch of salt and pepper 

Put the tray in the oven for 10 min or until the fish is cooked through

Tip: Your fish is cooked when it turns opaque and flakes easily

Once cooked, drain and return the potatoes to the pot 

6 Smoky Fish On Mash

Heat a pot of salted boiling water to a gentle boil over medium heat

Crack the eggs into the water and leave them for 3 min

Once done, transfer them with a slotted spoon to kitchen paper or a clean tea-towel and season them with salt and pepper - these are your poached eggs

7 Smoky Fish On Mash

Return the drained potatoes to a low heat

Add a large knob of butter and a splash of milk

Mash until smooth, then add the chopped spinach

Stir in the grated cheddar and spring onion and season generously with salt and pepper - this is your cheesy spinach mash
