Boil a kettle

Cut the waxy potatoes in half

Add the potatoes to a pot of boiling water with a pinch of salt, bring to the boil over a high heat and cook for an initial 10-15 min or until fork-tender

While the potatoes are cooking, chop the trimmed green beans in half

Zest the lemon[s] (try to grate lightly with a micro-plane or sharp box grater and avoid grating the white pith, as this is very bitter!)

Cut the lemon[s] in half

Trim, then slice the spring onion[s] finely

Chop the parsley finely, including the stalks

Combine the juice of 1/2 [1] lemon with the mayonnaise and a generous pinch of salt and pepper – this is your lemon dressing

Once the potatoes have had an initial 10-15 min add the green beans and cook for a further 4-6 min or until everything is tender

Once tender, drain and leave in the colander to steam dry for a few mins

Meanwhile, heat a wide-based pan (preferably non-stick) with drizzle of vegetable oil over a medium-high heat

Once hot, add the smoked basa fillets and cook for 3-4 min on each side or until cooked through

Tip: Your fish is cooked when it turns opaque and flakes easily

Combine the drained potatoes, green beans, chopped spring onion and parsley with the lemon dressing - this is your warm potato salad

Chop the remaining lemon into wedges
