Cooking Instructions
Instructions for 2 people (double for 4)
1 Simple Smoked Fish Florentine Bake

Boil a kettle

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Cut the waxy potatoes (skins on) into small bite-sized pieces

Add the potatoes to a pot of boiled water with a pinch of salt, bring to the boil over a high heat and cook for 12-15 min or until fork-tender

2 Simple Smoked Fish Florentine Bake

While the potatoes are cooking, reboil a kettle

Dissolve the soft cheese and veg stock mix in 70ml [120ml] boiled water

Once dissolved, add the wholegrain mustard, 100ml [200ml] milk and a generous grind of black pepper – this is your creamy stock

3 Simple Smoked Fish Florentine Bake

Wash the spinach, then add it to a colander and pour boiled water over it until it starts to wilt

Rinse the wilted spinach under the cold tap until it's cool

4 Simple Smoked Fish Florentine Bake

Once cool, squeeze the water out of the wilted spinach as much as you can and then chop it roughly

Chop the smoked basa fillets into bite-sized pieces

5 Simple Smoked Fish Florentine Bake

Add the chopped basa, wilted spinach and creamy stock to an oven-proof dish

Give everything a good mix up

6 Simple Smoked Fish Florentine Bake

Once tender, drain the potatoes and return them to the pot with a very generous drizzle of vegetable oil and a pinch of salt

Crush the potatoes lightly with a fork

7 Simple Smoked Fish Florentine Bake

Top the spinach and basa with the crushed potatoes, making sure the potatoes are spread out evenly

Put the dish in the oven for 25 min or until the potatoes are crispy and browned – this is your smoked fish florentine bake
