When you've got great fish, it's best to keep things simple. This wholesome sea bass dish is as delicious and fresh as it looks. You'll create a homemade, dairy-free hazelnut & basil pesto – a lovely dressing for the green beans, plum tomatoes & potatoes. (Gluten and dairy-free, but unsuitable for coeliacs).

Cooking Instructions
Instructions for 2 people (double for 4)
1 Seabass, Green Beans & Hazelnut Pesto

Preheat the oven to 200°C/ 180°C (fan)/ 400°F/ Gas 6

Boil a kettle 

Add the hazelnuts to a baking tray and put them in the oven for 10-15 min or until they've darkened slightly in colour (toasted)

Once toasted, set them aside to cool

 

2 Seabass, Green Beans & Hazelnut Pesto

Cut the waxy potatoes (skins on) in half 

Add the chopped potatoes to a pot of boiled water with a large pinch of salt and cook over a high heat for 10 min or until they're fork-tender

Cut the baby plum tomatoes in half

Meanwhile, roughly chop the garlic

Chop the basil roughly, including the stalks

Chop the cooled hazelnuts roughly Add the chopped garlic, basil and hazelnuts to a pestle & mortar with a generous pinch of salt and 3-4 tbsp olive oil and grind everything together into a rough paste (alternatively, blitz everything up in a food processor) – this is your dairy-free pesto

Once the potatoes have been cooking for 10 min and are nearly fork-tender, add the trimmed green beans to the pot

Cook the potatoes and green beans together for a further 5-7 min, then drain everything and return the lot to the pot and leave to cool slightly

Meanwhile, heat a large, wide-based pan (preferably non-stick) over a medium-high heat with a drizzle of vegetable oil

Pat the sea bass dry and season the skin generously with salt

Once hot, add the sea bass, skin-side down and cook for 4 min, then flip and cook for 1 min further

Tip: try not to move the sea bass around the pan, as this will prevent it from crisping up

Add the chopped plum tomatoes to the cooked potatoes and green beans 

Add the dairy-free pesto and give everything a gentle mix
