Cooking Instructions
Instructions for 2 people (double for 4)
1 Thai Green Fish & Coconut Rice One-Pot

Boil a kettle

Trim, then slice the spring onions finely

Deseed the red pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into large bite-sized pieces 

2 Thai Green Fish & Coconut Rice One-Pot

Heat a large, wide-based pan (preferably non-stick) with a matching lid and a drizzle of vegetable oil over a medium heat

Once hot, add the chopped red pepper, most of the sliced spring onion (save some for garnish!) and the green curry paste and cook for 2-3 min

3 Thai Green Fish & Coconut Rice One-Pot

Meanwhile, remove the coconut cream from the sachet[s] and chop it roughly

Dissolve the chopped coconut and fish sauce in 450ml [900ml] boiled water – this is your coconut stock

4 Thai Green Fish & Coconut Rice One-Pot

Add the basmati rice, coconut stock, 1 tsp [2 tsp] sugar and a generous pinch of salt to the pan and give everything a good mix up 

Cover with a lid, reduce the heat to low and cook for 10 min or until most of the stock has absorbed and the rice is almost cooked

Tip: add a little water if the rice is not cooked or the mixture is too dry!

Meanwhile, chop the basil finely, including the stalks

Once the rice is almost cooked, top with the basa fillets and season them with a pinch of salt

Cook, covered, for a further 5-6 min or until the fish is cooked through

Once done, remove the cooked fish from the pan and stir through most of the chopped basil (save some for garnish!)
