Cooking Instructions
Instructions for 2 people (double for 4)
1 Lemon Crusted Cod On Lentil Braise

Preheat the oven to 200°C/ 180°C (fan)/ 400°F/ Gas 6

Peel and finely chop the brown onion[s]

Heat a large, wide-based pan (preferably non-stick with a matching lid) with a knob of butter over a medium-low heat

Once melted, add the chopped onion with a pinch of salt and cook for 5-6 min

While the onion is cooking, boil a kettle

Top, tail, peel and finely chop the carrot[s] 

Dissolve the Knorr vegetable stock cube[s] in 750ml [1.4L] boiled water

Rinse the puy-style lentils

Once the onion has softened, add the carrot, bay leaf[ves], puy-style lentils and vegetable stock to the pan

Cook, covered, for 30-40 min or until the lentils are tender

Tip: If the finished lentils look watery, remove the lid and cook over a high heat until thickened

5 Lemon-Crusted Cod With Braised Puy Lentils

Meanwhile, zest 1/2 [1] lemon

Slice the remaining, non-zested lemon into wedges

Chop the parsley finely, including the stalks (reserve some leaves for garnish!)

Grate the cheddar cheese

 

6 Lemon Crusted Cod On Lentil Braise

Combine the panko breadcrumbs, chopped parsley, lemon zest and grated cheese

Add a generous drizzle of vegetable oil and a pinch of salt and pepper – this is your breadcrumb mixture

 

7 Lemon Crusted Cod On Lentil Braise

Add the cod fillets to an oiled baking tray and top with the breadcrumb mixture

Once the lentils have 10 min left, put the tray in the oven for 10-12 min or until the breadcrumbs are golden and the cod is cooked through

Tip: Your fish is cooked when it turns opaque and flakes easily
