‘Mornay’ is a classic French cheese sauce. We’ve added spinach to ours for the ultimate cheesy spinach-y side to our lovely basa fillets. Cut into discs and crisped in the oven, the potatoes are quick to cook and look like giant scales.

1 Lemon Baked Fish With Spinach Mornay

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Cut the potatoes (skins on) into slices, approx. 1cm thick

Add them to a baking tray (use tin foil to avoid mess!)

Drizzle the potatoes generously with olive oil, then season generously with both salt and pepper

Tip: drizzle from up high for even coating!

Put the tray in the oven for 20-30 min or until the potatoes are cooked through and crispy

 

3 Lemon Baked Fish With Spinach Mornay

Meanwhile, grate the cheddar cheese

Zest 1/2 [1] lemon and cut into quarters

Wash, dry, then chop the spinach roughly

Add 1 tbsp [2 tbsp] butter to a pot over a medium-low heat

Once melted, add 1 tbsp [2 tbsp] flour and cook for 2 min, stirring constantly - this is your roux

Whisk in 200ml [300ml] milk 

Continue to cook, whisking constantly, for 3-6 min until a smooth, thickened white sauce remains (it should be thick enough to coat the back of a spoon)

Once thickened, remove from the heat, cover and set aside -this is your béchamel sauce

6 Lemon Baked Fish With Spinach Mornay

Add the basa fillets to a baking tray (use tin foil to avoid mess!)

Drizzle them with 1-2 tbsp olive oil, season lightly with salt and pepper and scatter the lemon zest over

Put the tray in the oven for 10 min or until the fish is cooked through

Tip: your fish is cooked when it turns opaque and flakes easily

7 Lemon Baked Fish With Spinach Mornay

Return the béchamel sauce sauce to a medium heat and warm for 1-2 min

Once warm, add the cheese and chopped spinach and stir until the cheese has melted and the spinach has wilted

Tip: add a little water if the sauce becomes too thick
