Cooking Instructions
Instructions for 2 people (double for 4)
1  King Prawn & Chorizo Paella

De-link and cut the mini chorizo in half

Deseed the pepper[s] (scrape the seeds out with a teaspoon) and cut into thin strips

2  King Prawn & Chorizo Paella

Heat a large, wide-based pan (preferably non-stick) with a matching lid, with a drizzle of olive oil over a medium heat

Once hot, add the chorizo and cook for 3-4 min until it starts to release its golden oil

Meanwhile, peel and finely slice the onion[s]

Peel and finely chop (or grate) the garlic

3  King Prawn & Chorizo Paella

Add the pepper, onion and garlic with a big pinch of both salt and sugar

Cook for 10 min or until softened and caramelised

4  King Prawn & Chorizo Paella

Add the turmeric and paprika (adding more oil if too dry)

Cook for a further 1 min, then add the prawns

5  King Prawn & Chorizo Paella

Add the rice and stir to fully coat the grains

Add 350ml [700ml] water and bring to the boil over a high heat

Once boiling, crumble in the stock cube[s], add the bay leaf[ves] and reduce the heat to low

Cover and cook for 10-15 min or until the rice has absorbed most of the liquid

 

6  King Prawn & Chorizo Paella

Meanwhile, cut the lemon[s] in half

Chop the parsley finely, including the stalks

7  King Prawn & Chorizo Paella

Once the rice is cooked, remove the pan from the heat and squeeze in the juice of 1/2 the [whole] lemon and add most of the parsley (save a little for garnish)

Stir gently and season with plenty of pepper

Cut the remaining lemon into wedges for serving
