Cooking Instructions

1 2356 - Ginger & Peanut Prawns With Sesame Brown Rice

Rinse the brown rice, add it to a pot with plenty of cold water and bring to the boil over a high heat

Once boiling, reduce the heat to medium and cook for 15-20 min or until it's tender with a slight bite then drain, reserving a cup of starchy rice water

Once drained, return to the pot and keep covered until serving

Rip the leaves off the spring greens, discard the tough stalks, then layer the leaves over each other, roll them up and slice into thin strips

Tip: Cut the strips in half if they're long

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a high heat

Once hot, add the sliced spring greens with a pinch of salt and cook for 3-4 min or until tender with a bite

Once tender, transfer to a bowl and reserve the pan for later

Whilst the spring greens are cooking, peel (scrape the skin off with a teaspoon) and finely chop (or grate) the ginger

Return the pan to a medium heat with a drizzle of vegetable oil 

Once hot, add the chopped ginger and cook for 1-2 min or until fragrant

Once fragrant, add the soy sauce, Chinese wine and hoisin sauce and stir it all together

Add the king prawns and cook for 3-4 min or until cooked through

Tip: Add some of the starchy rice water if the pan is looking dry

Meanwhile, add the cooked spring greens to the cooked brown rice with the toasted sesame oil

Return the pot to a medium-low heat and cook for 1-2 min, gently stirring it together, or until the rice and spring greens are piping hot – this is your sesame brown rice

Crush the peanuts in their bag with a rolling pin, then add them to the prawns and give everything a good mix up – these are your ginger & peanut prawns
