Cooking Instructions

Add the rice, 340ml (680ml) of water and salt (optional) to a pot with a lid on a high heat and bring to the boil

Once boiling, reduce to a simmer and cook covered for 5 min, until half-way done

Drain and rinse the rice under cold water until cool to the touch for further cooking in step 4

Meanwhile, peel the ginger (use a teaspoon to scrape the skin off) and chop finely

Peel and chop the garlic finely

Slice the spring onions finely, discarding the root ends

Chop the coriander finely (including the stalks)

Heat a wide based pan (preferably non-stick) over medium high heat with 2 tbsp (4 tbsp) of vegetable oil

When hot, add the garlic, ginger, chilli flakes (adjust to your preference) and 1 tsp (2 tsp) of sugar

Cook for 30 sec (until sizzling), then add the tomato paste for 30 sec more (watch out for spitting)

Season with salt and pepper

Add the drained rice to the chilli pan, spreading it out in a single layer---reduce the heat to medium and cook for 5-6 min, or until it crackles and the bottom crisps up

Adjust the heat to prevent burning but still ensuring a proper crust forms underneath

Meanwhile, roughly chop your peanuts (used in step 8)

Lower the heat to a medium low

Add the prawns and cook for 2 min, or until starting to turn pink around the edges, stirring occasionally

Make a well in the centre of the pan and crack the egg(s) into it

Break the yolk(s) up briefly with a spatula or fork then allow the egg to set slightly before mixing it through the rice

Cook the rice, prawns and egg for a further 2 min, until the rice is hot

Remove the rice from the heat and stir in the soy sauce, spring onions and coriander (reserve some for garnish if desired)
