Cooking Instructions
Instructions for 2 people (double for 4)
1 2432 - Crispy Cajun Prawn Po'Boy

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Cut the potatoes (skins on) into chips

Add the chips to a baking tray with a generous drizzle of vegetable oil and a pinch of salt and pepper

Give everything a good mix up and put the tray in the oven for 20-25 min or until golden and crisp

While the chips are cooking, add the smoked paprika, dried oregano, cayenne pepper (can't handle the heat? Go easy!) and a very generous grind of black pepper to a small bowl

Add the soy sauce and 2 tbsp [4 tbsp] olive oil and mix it all up – this is your spice paste

Combine 1 tsp [2 tsp] of the spice paste with the mayonnaise, 1 tsp [2 tsp] of the white wine vinegar (save the rest for later!) in a small bowl – this is your cajun mayo

Add the king prawns to the remaining spice paste and give everything a good stir until fully coated

Add the cornflour to a large bowl, then add the spiced prawns and give everything a good mix up until the prawns are fully coated

Slice the tomato[es] finely

Chop the little gem lettuce[s] in half 

Shred half the lettuce finely

Cut the remaining lettuce into wedges

Once the chips are almost done, heat a large, wide-based pan (preferably non-stick) with a very generous drizzle of vegetable oil (enough to cover the base of the pan) over a high heat

Once hot, add the coated prawns and cook for 4 min, turning once half way, until crisp and cooked through - these are your crispy cajun prawns

Once done, transfer the crispy cajun prawns to kitchen paper

Meanwhile, put the ciabatta rolls in the oven for 4-5 min or until crusty and warm

Once done, carefully slice the warmed ciabattas in half 

Combine the remaining vinegar with 2 tbsp [4 tbsp] olive oil and a pinch of salt – this is your dressing
