Cooking Instructions
Instructions for 2 people (double for 4)
1 Creamy Prawn & Lemon Linguine

Peel and slice the onion[s] finely

2 Creamy Prawn & Lemon Linguine

Heat a large, wide-based pan (preferably non-stick) with 1 tbsp [2 tbsp] olive oil over a high heat

Once hot, add the onion with 1 tsp [2 tsp] salt and 1 tsp [2 tsp] sugar 

Cook for 4 min, then reduce the heat to medium and cook for a further 5 min or until starting to caramelise

Meanwhile, boil a kettle

3 Creamy Prawn & Lemon Linguine

Peel lengths off the courgette until you're left with ribbons and a seedy core

Chop the core into bite-size pieces

Peel and finely chop (or grate) the garlic 

4 Creamy Prawn & Lemon Linguine

Add the linguine to a large pot of salted boiling water over a high heat

Cook for 8-10 min or until cooked but with a slight bite 

Once cooked, drain and set aside, reserving 150ml [300ml] of the pasta water

5 Creamy Prawn & Lemon Linguine

Meanwhile, add the chilli flakes (can't handle the heat? Go easy!), courgette core and garlic to the carmelised onions

Cook for a further 4 min or until starting to brown

6 Creamy Prawn & Lemon Linguine

Add the courgette ribbons and cook for a further 3 min

Add the prawns and cook for 1 min or until starting to turn pink around the edges, then crumble in half [all] of the stock cube and add the reserved pasta water

Cook for a further 3 min or until the liquid has mostly reduced and a thin sauce remains

7 Creamy Prawn & Lemon Linguine

Meanwhile, halve the lemon[s]

Remove the pan from the heat and stir in 2 tbsp [4 tbsp] crème fraîche and a big squeeze of lemon juice

Season with plenty of pepper

Add the linguine and toss it all together
